Hummus & Egg Substitute

Use the chickpeas for hummus and the liquid from the can for an egg substitute!

Christmas 2020, I was draining and throwing away garbanzo beans in order to get the juice for an egg substitute. There had to be a better solution. One son can’t have sesame seeds, but I looked into hummus without tahini. Jackpot! I honestly love this so much, I have no idea how long it lasts in the fridge. Because in my fridge, it only lasts 3 days. But that’s because it’s gone by then.


Hummus is really easy to make! All you need are a few ingredients and a blender.

Can Garbanzo Beans (I buy ones that only contain the beans, water and salt)

1-ish Tbsp Oil (I use grapeseed, but you can use whatever you want)

Lemon (Use 1/4, squeezed or you can use vinegar. The acid makes it pop!)

1/4-1/2 Clove Garlic (I like fresh, but you can use granules)

1 Green Onion Stalk (Or onion powder)

1-2 Tbsp Parsley (Again, I prefer fresh, but use dried sometimes. Just use less, 1-2 tsp)

1/2 tsp Cumin Powder

Salt

Pepper

Water (Helps it blend all together, otherwise it’s super thick)

*The thing about my recipes is that I often don’t measure. Plus, everyone likes things a little bit different. Play around with it and see what works for you. Pro tip: start on the low end. You can always add more!

Pro tip: Keep a sink filled with super hot, soapy water to immediately clean blender.

Aquafaba

The liquid that comes from a can of garbanzo beans is called aquafaba and can be used as an egg substitute. I'll go into that more later, but for now, just know:.

3TBSP LIQUID=1 EGG

 

Step one: for creamy hummus, remove the skin. To do this, gently squeeze the bean. Once skin is removed, put beans in a blender.

You don’t have to do it, but makes the hummus taste soooo much better!

You don't need a small blender. I just happen to have one for making smoothies.

Add oil, green onions and garlic.

Add lemon and parsley.

 

Add cumin, salt and pepper.

With fresh parsley and green onion, the hummus is green.

With dried parsley, the hummus is tan.
