When I was a kid, my dad used to bring home these cookies that I absolutely LOVED!! They were about 4 inches in diameter, and they were chewy. The part I loved was a sprinkling of sugar over the top. Delicious!

I’m not sure when they (Pepperidge Farm) stopped making them, but I’ve looked and can’t find them.

Originally, I made a gluten-free chocolate drop cookie. I would dip the bottom of a glass in sugar, and then press down each cookie. This made a sugar topping. But since we had to remove butter and eggs, the cookies never turned out right.

Fast forward to this past Christmas. My kids associate these cookies with the holidays, so I was determined to make it work.

Instead of making individual cookies, though, it works best in a bar pan.

When they first come out of the oven, they are super soft. I eat them with a fork. Later, it’s easy to pick up and eat like a regular cookie. But they are still chewy.

Chewy Chocolate cookies

1 1/4 cup canola oil

2 cups sugar

1/2 cup applesauce

2 tsp vanilla extract *

1 tsp baking soda

1/2 tsp baking powder *

2 3/4 cups gluten-free flour *

3/4 cup cocoa powder

1 tsp salt

Coarse sugar for sprinkling on top (optional)

Preheat oven 350°F (176°C).­­ Measure everything into a mixing bowl (making sure to sift any ingredients that may have clumps). Mix until completely combined. Place in a parchment paper lined bar pan.

Sprinkly coarse sugar over the top (optional).

Bake in preheated oven for 18-20 minutes.

(*A bar pan is approximately 12”X17”. Instead of being completely flat, there is a lip that goes up all around the edge.)

Gather ingredients: canola oil, sugar, applesauce, vanilla extract, baking soda, baking powder, flour, cocoa and salt.

Measure 1 1/4 cups oil and pour into bowl.

Measure 2 cups sugar.

Sift sugar if there are any lumps.

Measure 1/2 cup applesauce and add to bowl.

Add 2 tsp vanilla extract.

Add 1 tsp baking soda.

Add 1/2 tsp baking powder.

Add 2 3/4 cups flour.

Sift, if needed. And I think it always needs sifting!

Add 3/4 cup cocoa powder (use sifter!)

Add 1 tsp salt.

Seriously, my baked goods come out so much better when I sift!

Mix..

..until well combined (be sure to scrape bottom of bowl with a spatula).

I like to line the bar pan with parchment paper for easier clean-up.

Put cookie mixture in the pan.

Pat down with your hands.

Optional: Sprinkle coarse sugar over the top.

Bake at 350°F (176°C) for 18-20 minutes.
